Granted - normally one can not imagine Greek food without the obligatory garlic yogurt. Zaziki is just one of them. It's high time to remember that Zaziki is actually an appetizer and you can really do without it in main courses. Instead, there's a hefty tomato sauce with a hint of cinnamon (Stifado sends his regards).
Peel 4 large greens carefully below a small piece, above a larger piece cut off. Using a sharp knife, cut the inside of the onions in a cross shape (being careful not to scratch the outer layers) and hollow out with a spoon. Chop the inside of the onions and sauté in a pot with 1 teaspoon of butter . (Attention: The 4 onions should fit in later!)Add 2-3 pressed garlic cloves and fry for a short time. Put 3/4 can of chopped tomatoes in the pot, 1 strong pinch of sea salt , Pepper , 1 tablespoon of oregano , Add 1 teaspoon marjoram and 1 tbsp thyme . Let it stew for a few minutes. Open 1 small tin of white beans , rinse in a strainer under running water and drain.
In the meantime, some Olives (preferably dry with herbs) and some dried tomatoes in oil (drained) puree with 3 tablespoons of white beans. Pour the mixture into the hollow of the onions and top it off with a spoonful of drained white beans.
Then carefully place the onions in the saucepan with the tomato sauce and add the remaining chopped tomatoes. The onions should cook at least 2/3 in the sauce. Cook at low heat for at least 45 minutes with lid closed.
Dust 1 tsp ground cinnamon just before the end of cooking and place 1 tbsp of the sauce on top of the onions. (If you like a more intense cinnamon flavor, just cook a cinnamon stick in the sauce right from the start.) Fry 1 pack of vegetarian gyros in a pan (no extra oil is needed) ).
Place an onion with some tomato sauce on a plate and top with an olive. Add the gyros and garnish with finely chopped fresh onion rings. Finally, serve with chopped fresh herbs (parsley, oregano, a little mint) sprinkled.
Conclusion: onions are quite stubborn and may cook differently. My onion was still quite firm and had a bite, while my friend had caught a very soft, tender and sweet onion. So check it out better while cooking and maybe add a few more minutes.
